I'm not sure if this fits the criteria, but the Southeastern Association of Law Schools' Annual Conference provides probably the largest junior faculty workshop in the country. This year, between 70 and 80 junior scholars will be presenting papers or works in progress. Each is assigned a mentor, who can provide critique and feedback, and the audience, as well, usually provides good feedback. This may not fit the criteria you have described, however, because a paper is not required for participation.
